Cilantro Rice
I am not a rice lover. I almost never make it and when I do I am reminded why I don't make it because I just hate the taste of it. (I do love Panda Express fried rice though.) Anyway, I saw this recipe on a friends recipe blog. I thought it sounded kind of good since the ingredients you put in it are blended so there are no chunks. Turns out- it tasted REALLY good. I actually like it a lot and will probably make it again. Ingredients
4 t chicken bouillon
4t minced garlic
1/2 bunch cilantro
1 can diced green chilies
3/4 t salt
1 T butter
1/2 onion chopped
3 cups rice (not instant)
Directions: Put chicken bouillon, garlic, cilantro, diced green chilies, salt, butter and onion in a blender and puree until smooth. Pour into saucepan and add 3 cups water and bring to a boil. Add rice and simmer for 30 minutes.Now I didn't really follow the measurements exactly. I mostly used the recipe for the ingredients and method. Cooking 3 cups of rice makes A LOT, so I only did 2 (which still made way too much). I would probably cut the recipe at least in half if there is only 2 or 3 of you. I just used bouillon cubes- I think that is the same thing?
