"Healthy" Cookies

I found this recipe off this blog and thought they sounded good. I made them but didn't have coconut so I left it out and I put m&ms in them. They were good. Then I got some coconut and made them again. THEY WERE SO GOOD!! Make them with coconut if you have it. Either way though, this is a great recipe and you should try it. And I like to consider it healthy since it has oats and whole wheat in it:)Ingredients

1/2 c butter, softened
1/2 c granulated sugar
1/2 c packed brown sugar
1/2 tsp baking powder
1/4 tsp baking soda
1 egg
1 tsp vanilla
3/4 c all-purpose flour
1/2 c wheat flour
1 c quick oats
1 c coconut

1 c (or more) bittersweet chocolate

In a large mixing bowl beat butter on medium to high speed for 30 seconds. Add granulated sugar, brown sugar, baking powder, and baking soda. Beat until combined. Beat in egg and vanilla until combined. Beat in as much flour as you can with the mixer. Stir in remaining flour. Stir in rolled oats, coconut, and chocolate.

Drop dough by balls onto an ungreased cookie sheet. Bake at 375 degrees for 8 minutes or until golden around the edges. Cool on cookie sheet for 1 minute. Transfer to wire rack to cool completely.
