Sweet Pork
Okay, I can't get over how delicious this pork is. We pretty much eat just chicken. I don't branch out much but when I saw this recipe, I decided I needed to be brave and try it. I have no clue how to even buy cuts of meat. I never know what to get. Anyway, there were pork loin roasts and there were pork shoulder roasts. The recipe just says a pork roast so I didn't know what to get. I went with the loin because it was boneless.
Ingredients
4 lb pork roast
Rub roast with the following mixture:
1 tsp. salt
2 Tbs. brown sugar
1 tsp. red pepper
1 tsp. cumin
Place roast in crockpot.
Combine:
1 onion chopped
1 cup chicken broth
1 can coke
2 cloves minced garlic
Pour over roast.
Cook on low for 6-8 hours.
Shred pork and put back in crockpot.
Add 2-3 cups brown sugar.
Cook for another 3 hours.
My roast was only about 2.5 lbs. so I didn't cook it as long. It probably cooked for 5 hours then I shredded it and then it maybe cooked for another hour. I also only put in 1 1/2 cups of brown sugar at the end. I am telling you all to go make this for Sunday dinner tomorrow. We got 3 meals and 2 lunches out of it. The first night I just made homemade tortillas and we ate them with the pork inside. So yummy and simple. Then another night we had our versions of Cafe Rio salad and I made cilantro rice to go along with it. Then we had leftover salad the last night. The amazing thing about it was Chandler shoveled it in. He loved it and he will never eat meat. I'm assuming he liked it so much only because it was sweet:)
P.S. I have seen in other recipes that call for soda and meat together that they say you can't use diet because it won't turn out right. I used regular because I've heard that before. So I'm just giving a heads up if you use diet I have no clue if it will work or not. Let me know what happens if you do though?! Honestly, I don't think it matters but maybe you really do need all the sugar from the regular?

and I do use diet sodas in foods....turns out the same...just less calories :)
yummy! I am not sure if i have ever left a comment before-but i love your blog! You are such a good cook! you make super cute things and i want to be your blogging buddy! I am hoping that some of your gifts will rub off on me! I will definately be making this for dinner tomorrow night! My kids love pork-this is a little twist that i am sure we will all love. Just a little tip-when i have leftover pork like this one-it makes super yummy taquitos. Just put some meet in a corn tortilla-roll up and brush with a little olive oil-then bake it. My kids love these and they freeze well also! Again, love your blog-i'll be back soon!
