Pumpkin Whoopie Pies
Have you ever heard of a Whoopie Pie???? I know it sounds weird- Steve gave me the strangest look when I first introduced him to whoopie pies. He also thought I was so weird for loving FLUFF and eating fluffernutter sandwiches. sorry, I digress. Here is a variation of a whoopie pie. It is pumpkin and cream cheese and sugar and lard and oh so delicious.
(For some reason, I really wasn't into getting a good picture of these whoopie pies. I usually plan out my food pictures forever before I settle on something. I guess I was just tired last night....)
Ingredients:
1 can pumpkin (about 1 3/4 cups)
2 eggs
1 cup oil
2 cups sugar
2 tsp. vanilla
4 tsp. baking powder
2 tsp. baking soda dissolved in 2 tbsp. milk
1 1/2 tsp. salt
2 tsp. cinnamon
4 cups flour
Preheat oven to 350 degrees.
Mix pumpkin, eggs, oil, sugar, and vanilla. Then mix the rest of the ingredients with the flour and mix all that into the pumpkin mixture.
Drop by spoonful onto greased cookie sheets. Bake for about 10 minutes. (9 min. was the perfect time for me) Cool on racks.
While cooling, make frosting.
Frosting:
1 stick butter, softened
1 8 oz. pkg. cream cheese, softened
1 lb. powdered sugar
vanilla extract to taste
Beat all together. Spread onto bottom side of cookie than put another cookie on top. Take a huge bite and enjoy!
For some reason we always would individually wrap our whoopie pies in plastic wrap. I guess they store better that way and then they also don't stick to each other. I also always put them in the freezer because this makes a ton and it keeps me from eating them all at once. They are really good frozen also.

How coincidental -I was thinking about making whoopie pies the other day. But I hadn't considered pumpkin. What a great idea.
