Pumpkin Cookies with caramel frosting
These cookies I think are now my favorite pumpkin cookies. I love chocolate a lot but I think these are better than the traditional pumpkin chocolate chip cookie. They are really soft and the frosting just gives them that extra little kick. Last year when I made these, I remember my frosting being really runny and dripping off the cookies. This time it wasn't at all. Who knows? Either way they are still de-licious! Ingredients:
2 cups shortening
2 cups white sugar
2 cups white sugar
2 cups pumpkin
2 eggs
2 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. salt
4 cups flour
Frosting:
6 tbsp. butter
8 tbsp. milk
2 cups powdered sugar
1 1/2 tsp. vanilla
1 cup pack brown sugar
1 cup pack brown sugar
1. Cream shortening, sugar, and pumpkin. Add eggs and mix well. Sift together the baking soda, cinnamon, salt, and flour. Add to pumpkin mixture and mix well.
2. Drop from spoon to cookie sheet. Bake 10 minutes at 350 degrees.
3. To make frosting: Cook butter, milk, and brown sugar until dissolved. Cool and add powdered sugar and vanilla. Spread over warm cookies..JPG)
Oh yeah, I half the recipe because this makes a TON! If you aren't making them for an event, please half the recipe. Otherwise you will gain 50 pounds and it will all be my fault. I believe the recipe comes from allrecipes.com- my MIL gave it to me.
