Hasselback potatoes

We aren't huge potato eaters here but I saw these potatoes and they were so pretty that I just had to make them. I think they look so cool. They were very tasty too.

Hasselback Potatoes


4 medium baking potatoes
4 tsp. minced garlic
2 tablespoons butter
Coarse salt
Freshly ground black pepper

Preheat the oven to 425. Put the potato on a cutting board, flat side down. Start from one end of the potato, cut almost all the way through, making thin slices.

Arrange the potatoes on a baking sheet. Melt butter and stir in minced garlic. Spread between the slits. Sprinkle some salt and freshly ground black pepper over the potatoes.

Bake the potatoes for about one hour or until the potatoes turn crispy and the flesh is soft.
