2 ingredient cupcakes/muffins
My birthday was last week. At about 5:00 pm I decided that I should probably make myself a little something to stick a candle in. (It will be a nice day when I have children old enough to make me a birthday cake:) So I looked around the kitchen and I had a cake mix. I remembered about those muffins you can make with just a cake mix and canned pumpkin. I thought, "that's fast, easy, and tasty!". So my son and I got to work.
Ingredients
1 cake mix
1 can pumpkin (the smaller one)
chocolate chips (optional)
Mix both ingredients together until moist. Add chocolate chips if you love chocolate:) Spray or line cupcake tins and fill 3/4 of the way full. Bake in 350 degree oven for 15-20 minutes.
*I use my own pumpkin that I cook up and freeze and I only had 1 cup of it left. (good thing it is fall and time to cook up and freeze more pumpkin!) So, since a can of pumpkin is more like 2 cups, I just dumped in some apple sauce with the pumpkin and they turned out great!!To make them more like cupcakes, I whipped up some cream cheese frosting and put that on top. My son put the sprinkles on and we were good to go with cute little birthday cupcakes. My son was so cute and had to match the candle color with the sprinkle color.
These turned out so yummy. They are really dense and moist so not like a fluffy cupcake but I like things more dense. They were so good cold with the hard chocolate chips in the moist cake part. We loved these and they were all gone in 3 days! You don't have to feel bad about the cream cheese frosting because the muffins don't have any fat in them!

One day I'll bring you some cupcakes you DIDN'T bake and call it your "un-birthday" present. :)
