Pumpkin Roll
Pumpkin rolls have always scared me. I think because I made a really bad one once so I've never tried again. I'm also not exactly sure what a jelly roll pan is? I just use a cookie sheet that has taller edges. I decided to try it out because I had some pumpkin that needed to be used up. It was actually so simple and tasted yummy. Ingredients
Cake:
Powdered Sugar
3/4 cup flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
1/4 tsp. salt
3 large eggs
1 cup sugar
2/3 cup pumpkin
1 cup chopped walnuts (optional)
Filling:
1 package (8 oz.) cream cheese, softened
1 cup powdered sugar
6 Tbsp. butter, softened
1 tsp. vanilla
For Cake: Preheat oven to 375 degrees. Grease 15x10 inch jelly roll pan; line with parchment paper. Grease and flour paper. Sprinkle a thin, cotton kitchen towel with powdered sugar.
Combine flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. Beat eggs and sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with nuts.
Bake for 13-15 minutes or until top of cake springs back when touched. Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together. Starting with narrow end. Cool on wire rack.
For filling: Beat cream cheese, powdered sugar, butter and vanilla in small mixer bowl until smooth. Carefully unroll cake; remove towel. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkly with powdered sugar before serving, if desired.

Pumpkin rolls always remind me of my aunt. She would make them for every special occasion. Yours look delish - and like you, I've been too chicken to make them myself. So now, you've inspired me to try.

Katrina, I've been meaning to comment for forever now. Just so you know, the cookie sheets that have the turned up edges ARE in fact called Jelly Roll pans. I never would have known this either if it wasn't for an old (and I mean old when I say old, for she is very old) friend of mine. Maybe only OLD people know the proper name.
