Pumpkin Chocolate Chip Cookies
I made one of the best Fall desserts yesterday- Pumpkin chocolate chip cookies! They are so tasty and good. Again, Steve doesn't like them but I had to make them anyway because I love them. I have another really good pumpkin cookie recipe that I will be posting shortly. That one Steve does like (because there is no chocolate). Anyway, I think everyone should go to their kitchen right now and make these. You won't be disappointed! Ingredients:
1 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 cup pumpkin
1 tsp. vanilla
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
Preheat oven to 375 degrees.
1. Beat together butter, sugars, and egg with beaters until combined.
2. Beat in pumpkin and vanilla.
3. Combine flour with the rest of the ingredients. Add to pumpkin mixture and mix until all combined.
4. Stir in chocolate chips, or raisins, or nuts, or all three if your feeling crazy! Whatever you want and how ever many you want.
5. Spoon onto greased cookie sheets and bake for about 8-10 minutes. Cool on wire rack then dig in!
Side Notes: I always have my own pumpkin that I have cooked up and pureed. I have never really used canned pumpkin but I think it makes it taste different. If you do cook up your own pumpkin, make sure you get out as much water as you can. I usually spread it on paper towels and the water soaks out and then I scrape it up. Also, I didn't have ginger so I left it out. No big deal. And I think I always add way more cinnamon than I'm supposed to. I never measure, just dumb:)
