Butterscotch Pumpkin Cake

Okay, so here is my first recipe. I made it a while ago and thought it was yummy. Steve even liked it and he always says he doesn't like pumpkin.

1 2/3 cups (11 oz. package) butterscotch morsels
2 cups flour
1 3/4 cups sugar
2 tbsp. baking powder
1 1/2 tsp. cinnamon
1 tsp. salt
1/2 tsp. nutmeg
1 cup pumpkin
1/2 cup vegetable oil
3 eggs
1 tsp. vanilla
powdered sugar

Preheat oven to 350 degrees. Grease bundt pan. Microwave 1 cup of morsels for 1 minute; stir and keep microwaving at short intervals until all melted. Cool to room temperature. Combine flour, sugar, baking powder, cinnamon, salt and nutmeg in bowl. Stir together melted morsels, pumpkin, vegetable oil, eggs, and vanilla in a large bowl with whisk. Stir in flour mixture and rest of butterscotch chips. Spoon batter into bundt pan. Bake for 40 to 50 minutes. Cool in pan on wire rack for 30 minutes; remove to wire rack to cool completely. Sprinkle with powdered sugar before serving.

Yummm, that sounds great! I don't really like butterscotch. Do you think it would be good with chocolate chips instead? I know I've had chocolate chip pumpkin bread before that was yummy, maybe it'd work?

P.S. Do you care if I post some recipes on our blog? I know it's totally copying you, and I'll acknowledge that, but I think it's a great idea to share recipes. I love trying new things!

My mom just tried it with Chocolate chips so I will have to ask her if it was good. I'm sure it would be delicious though.

That would be awesome if you put recipes on your blog. I don't care at all. IN fact, I stole the recipe idea from some other blogs I have snooped at.

Oh good, I'd love to hear how it turned out. And, I'll start posting recipes then, they're fun to share and make dinners more interesting when there's variety. :) I wish we lived closer to you guys so we could do fun sewing stuff together. Too bad. :(
