Snickerdoodles

YUM! Who doesn't love a snickerdoodle? I love them just for the name. I had a craving for them yesterday so I made them up and they were just what I craved. I just used the recipe out of my Betty Crocker cookbook. Here it is:

Ingredients

1 1/2 cups sugar
1/2 cup butter, softened
1/2 cup shortening
2 large eggs
2 3/4 cups flour
2 tsp. cram of tartar
1 tsp. baking soda
1/4 tsp. salt
1/4 cup sugar
2 tsp. ground cinnamon

1. Heat oven to 400 degrees.

2. Beat 1 1/2 cups sugar, butter, shortening, and eggs in large bowl with electric mixer on medium speed. Stir in flour, cream of tartar, baking soda, and salt.

3. Shape dough into 1 1/4 inch balls. Mix 1/4 cup sugar and the cinnamon. Roll balls in cinnamon sugar mixture. Place 2 inches apart on ungreased cookie sheet.

4. Bake 8 to 10 minutes or until set. Immediately remove from cookie sheet to wire rack.

mmmm...I love snickerdoodles and they are so easy to make! I find that you have to cook them less than you think you should to make sure they don't get hard.
