Tortellini Soup
I saw this recipe on a recipe blog I look at and it looked really yummy. I tried it but changed a few things. I didn't really cut the recipe in half but I did make less so my directions make enough for just two people with a few left overs. If you want to make more, follow the link to the actually recipe.
Ingredients
1 pkg tortellini (you can find this in the "deli meats and cheeses" section of the grocery store- they come in packages of about 9 oz. Or I'm sure you could use frozen ones also)
1 1/2 (14 oz.) cans chicken broth
4 garlic cloves - minced (I use minced garlic so about 2 tsp.)
14 oz. can of stewed tomatoes (next time I would use crushed or diced)
1/2 lb. ground sausage
1 tsp. basil
1/2 pkg chopped spinach (in the freezer section, but thaw and drain before adding it to the soup)
1/4 c Parmesan cheese
1. Brown sausage and garlic. Drain fat put into soup pot.
2. Add chicken broth, tomatoes, and basil (I used fresh but whatever you have). Bring to boil and add Tortellini. Simmer for about 10 minutes until tortellini are cooked through.
3. Add spinach and cheese.
Serve with a side salad and some crusty bread.
