Lemon Broccoli Pasta
I'm not really sure where this recipe came from. I think my mother-in-law made it and then I started making it. I may have changed it up but here is how I make this delicious pasta.Ingredients
1 lb. bow tie pasta
1 lb. broccoli
2 lemons (zested and juiced)
1 1/2 cups Parmesan cheese (not the kind in the green can)
salt
pepper
butter
oil
Boil pasta according to box directions. Steam broccoli to desired tenderness (not too soft). Drain pasta and put in big bowl. Zest both lemons on top of the pasta. Then juice both lemons into the pasta. Mix in 1-2 tablespoons of butter and then oil if you need a little more moisture. Add in broccoli and season with salt and pepper. Mix all up and lastly add Parmesan cheese. Can be served at room temperature.
