Apple-Carrot Whole Wheat Muffins

These were YUMMY!! And very dense. And very healthy. I have been trying to get more fiber and healthy stuff inside my kids and these worked. I love making muffins and breads with lots of healthy stuff in them because it is the one thing my 3 year old will eat. I happened to notice the recipe on the back of my bag of Pillsbury Whole Wheat Flour. Thanks Pillsbury!


1 cup flour
1 cup whole wheat flour
1/2 cup sugar
2 tsp. baking soda
1 tbsp. cinnamon
1/2 tsp. salt
2 cups peeled and shredded apples (3 medium)
1/2 cup shredded carrots
1/2 cup raisins
1/2 cup shredded coconut (optional)
1/2 cup walnuts or pecans (optional)
1/2 cup vegetable oil
1/4 cup milk
2 tsp. vanilla
2 large eggs

Heat oven to 350 degrees. Line 12 muffin cups with paper baking cups or spray with no-stick spray.

Combine flours, sugar, baking soda, cinnamon and slat in a large bowl. Add apples, carrots, raisins, walnuts and coconut (if using). Mix well. Add oil, milk, vanilla and eggs. Stir just moistened. Fill prepared muffin cups 3/4 full.

Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan. Cool.

Makes 12 muffins.
