Lettuce Wraps
Have I got a delicious dinner for you!! Homemade lettuce wraps- YUM-O! Now we could all go out to P.F.Changs and order these and have a fantastic dinner. BUT, we don't all have the time, money, or even a P.F.Changs nearby (that's me on all of those). So I suggest you go to the grocery store, buy some key ingredients and get cooking!
Filling:
Chicken
Carrots
Zucchini
Celery
Ice Burg lettuce
(optional: mushrooms, onions, water chestnuts, peppers- whatever you like)
Stir Fry Sauce:
2 Tbsp. soy sauce
2 Tbsp. brown sugar
1/2 tsp. rice vinegar
2/3 C. rice vinegar
1 C. soy sauce
1 t. chili oil
A splash of lime juice
garlic powder to taste
Special Sauce II: (redder, lighter one on right)
1/4 cup sugar
1/2 cup water
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
2 tablespoons ketchup
1 tablespoon lemon juice
1/8 teaspoon sesame chili oil
1/2 cup water
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
2 tablespoons ketchup
1 tablespoon lemon juice
1/8 teaspoon sesame chili oil
1- Dice vegetables into little tiny pieces. I prefer small pieces but if you like them big by all means chop them however you want. I used maybe a cup of each and that was enough for the 2 of us. Set them aside.
2- Cut chicken in small pieces and cook in stir fry sauce. Set aside.
3- In same pan cook the vegetables until desired tenderness in stir fry sauce. When chicken is cool enough to touch you can finish dicing it smaller. (I have a hard time getting it small enough when it is raw so I found it easier to just dice it up after cooking it). When vegetables are cooked, add in chicken and heat through..JPG)
4- If you bang the lettuce head on the counter it will loosen the stem so you can easily peel the leaves away. Wash up some lettuce leaves and serve with the chicken and vegetables in the middle with some extra sauce on top. Wrap it up and eat. (Warning: they are very messy and drip everywhere but it is so worth it.)
I'm sorry I'm not very good at giving step by step directions. To me it is all common sense so I have a hard time writing it all out. If you want better directions you can go here. The first special sauce I got from my sister. The other one I got from the link above but I left out the last 4 ingredients and just added the sesame chili oil that I already had. We didn't like that sauce as much. The first one is way better but it was fun to try out two different recipes.

I'm loving these last three posts! Everything looks sooo delish. Espesh these lettuce wraps. Nice to know you can make them if you can't get a trip to Chang's in!
I made these last night and they were really yummy! I like the sauce with the garlic in it, I can't remember which that was. Yum-o
