Caramelized Pork Slices

I've been meaning to post this recipe for a few days now. I made this last week and it was so good. I am not a fan of pork- I always get grossed out by it and I don't like the texture. I decided to give pork chops another try though and I really liked them this time. I think it was the caramelization. We ate them with mashed sweet potatoes and a salad.

(For some reason when I don't use a flash, the picture comes out yellow. It looked better this way than with a flash though.)

Ingredients

1 pound pork tenderloin
2 cloves garlic, finely chopped
2 tbsp packed brown sugar
1 tbsp orange juice
1 tbsp molasses or maple flavored syrup
1/2 tsp salt
1/4 tsp pepper

1. Cut pork into 1/2 inch slices. Spray 10 inch skillet with cooking spray; heat over medium high heat.

2. Cook pork and garlic in skillet 6 to 8 minutes, turning occasionally, until pork is slightly pink in center. Drain if necessary.

3. Stir in remaining ingredients. Cook about 2 to 5 minutes, stirring occasionally, until mixture thickens and coats pork.

This picture is with flash. I guess it doesn't look as bad as I thought it did before. Oh well. One more thing I might skip on next time: I used some maple syrup instead of molasses and it made them taste a little too much like pancakes. Maybe if you had real maple syrup it would taste a lot better.
