Sour Cream Banana Bread
My sister posted this recipe on her site and I am now addicted. It really is the best banana bread I've had. It is so soft and moist but not dense heavy like some banana breads. I have made it 3 times in the past few weeks and I have 3 more banana on my counter right now that have gone too far and need to be made into bread. I half the recipe and get two loaves of bread (just use 1 egg if you half). I love this toasted with butter. Banana Sour Cream Bread
3/4 cup butter
3 cups white sugar
3 eggs
6 very rip bananas, mashed
16 ounces sour cream
2 tsp vanilla extract
2 tsp cinnamon
1/2 tsp salt
3 tsp baking soda
2 1/2 cups flour
1 cup walnuts (optional)
Preheat oven to 350 degrees. Grease 4 7x3 inch loaf pans. In a large bowl, cream butter and sugar. Mix in eggs, mashed bananas, sour cream, vanilla and cinnamon. Mix together salt, baking soda and flour, then add to sugar and banana mixture. Mix well. Stir in nuts. Divide into prepared pans. Bake for 1 hour, or until toothpick inserted in center comes out clean.
