Cucumber Sandwich

I've been meaning to post this for weeks now. I had a craving for a cucumber sandwich so I broke down and paid $2 for one of those long English cucumbers (is that what they're called?). I never buy cucumbers because they seem so expensive but sometimes cravings win. Anyway, I got creative and ended up with the best tasting sandwich ever! Seriously, we've had this for dinner twice and I've had it for lunch lots of times. So yummy!
Ingredients

Cucumber
Tomato
Smoked Gouda
Mayo
Salt
Pepper
Bread, bagel, roll- whatever you want

Cut the cucumber nice and thin so it layers nicely. Same goes for tomato and Gouda (or any cheese you like).

Lightly toast bread then spread with mayo and layer on cucumber, tomato, and cheese. Sprinkle with salt and pepper.

Open wide and take a bite! You won't regret it.
