Itza-pizza

I don't know what is up but I have been rockin' at dinners lately. I usually hate making dinner but I have made some amazing things since we have been in North Carolina. Maybe it is the climate? Anyway, this pizza was so good tonight. SSSOOOO incredibly delicious that I ate way too much and now my stomach hurts. I don't really have a recipe for you but I will tell you what is on it. I usually just throw things together.

I usually make my own pizza dough but today I bought it fresh at the grocery store. I rolled it out and then took string cheese and cut it in fourths and rolled the pieces into the edge of the crust. Then I put fresh slices of tomatoes, calamata (sp?) olives, mozzarella cheese, minced garlic, sprinkle of salt and then Italian seasoning. Into the oven and who knows how long later (I just keep my eye on it until it looks done) out came the most delicious pizza ever!! It would have been better with fresh mozzarella cheese but that was too expensive for me.

I also made a wicked good BBQ chicken pizza too. So simple: spread crust with BBQ sauce, put on chicken, cilantro, then cheese and bake. YUMMY!
